This weekend I was fortunate enough to spend some time with my mom and her wonderful friends during their trip to LA. We ate at a quaint restaurant right off the Sunset strip (but it was so cute that you’d never know it). It’s called Off Vine and I highly recommend it.
Anyways, it was the birthday of two of the ladies so I jumped at the chance to bake something. I found this recipe for blondies. They were very easy, simple and so sweet!

What You Need:
1 box yellow (or Funfetti) cake mix
1/4 cup vegetable oil
1/3 – 1/2 cup milk
1/4 cup rainbow sprinkles (if you use a yellow cake mix, add these in)
1/2 cup white chocolate chips
Sprinkles for the top
Frosting (see recipe below)
What You Do:
Combine the cake mix, oil, and egg in a large bowl
Add the milk slowly – you want the batter to remain as dense as possible
Then mix in the rainbow sprinkles and white chocolate chips
Spray pan (either 8×11″ or 9×9″ pan) with non-stick cooking spray
Pour batter in pan and spread to the edges
Bake for 25-30 minutes at 350 degrees. (They will be a little soft/gooey in the middle- just let them sit for about 20-30 minutes and they will set up
But I guarantee that you will not be able to wait that long.)
Frost when cooled (optional)
NOTE: If you want to make your own frosting mix 1/4 cup margarine, 2-3 TBSP milk, 1 tsp vanilla, 1 box powdered sugar, food coloring. Mix it all together, starting with 2 TBSP of milk and slowly adding the sugar. You want it to have a thick consistency.
Messiness – I’m finding that baking is relatively messy, but this is no moreso than other recipes I’ve tried. A lot of mixing and that’s about it!
Simplicity – Honestly, all day I’d been gearing up to make these because I’m such an awful baker, but the recipe is SO easy to follow.
Budget – Fairly cheap, especially since you don’t need flour, etc. It’s all in the mix!
Delicious Factor – They are SO sweet! If you love sweet things (for dessert or breakfast) then this is the recipe for you! (also you have a lot of left over frosting, you have that going for you).
