This is the greatest oven roasted carrots recipe that I’ve found, and why wouldn’t it be since I found it on the First Lady of the Kitchen’s website.
What You Need:
3 lbs of carrots (I used baby carrots)
1/8 tsp cayenne
3 TBSP lemon juice
2 TBSP honey
What You Do:
Preheat the oven to 450 degrees
Place the carrots in one layer on a baking sheet (I had to use two of them)
Drizzle the oil over them and toss with cayenne and salt
Bake for 30 to 40 minutes, tossing once
While in the oven, mix the lemon juice and honey together
Once out, drizzle the glaze over them and toss
Messiness – You need two baking sheets, but other than that it’s not messy at all. Everything is done on the baking sheets.
Simplicity – Really easy! Prep time is only about 10 minutes, and if you use baby carrots like I did, you don’t even need to cut any up.
Budget – These are ingredients typically found in your kitchen already so you may not need anything at all. If you do though, baby carrots are fairly cheap.
Delicious Factor – So good! I really love carrots, but get tired of them. If you’ve fallen in a veggie rut, or need a fast appetizer/side dish, this recipe is perfect! Sweet and savory is the only way to explain this.
