This is one recipe that is simple and very healthy. If you want something to get your veggies for the day, then try this. You can make it as spicy as you want, or as bland, it’s really all in your choice of salsa. I plan on making it this weekend for my dad’s birthday. My nana is making her famous enchiladas and fideo so I thought this would be the perfect veggie dish to compliment the other flavors. You can find the recipe here.
Messiness– Just chopping and measuring. No mess at all.
Simplicity– Cutting the zucchini is the hardest part. Ready from start to finish in 30 minutes or less (depending on if your cutting skills are Beni Hana worthy).
Budget– Pretty cheap. Under $10 if you have things like oregano already.
Delicious Factor– It definitely tastes healthy! But it’s the kind of healthy that even when covered in cheese, you still feel good about eating it. A LOT of the taste will come from your choice of salsa. I’ve tried is with a basic mild salsa and a pineapple chipotle.
