I ran across this recipe for lemon cookies that only calls for four ingredients so I had to try them out. While they were a bit messy, they are absolutely delicious! I’m on a big lemon kick right now and they are very lemony which was exactly what I wanted. Here’s the recipe:
1 box of Lemon cake mix
8-10 oz. of whipped cream
Mix the whipped cream, egg and cake mix together. It will be thick and gooey.
Place small teaspoon sized dollops into the bowl of powdered sugar and roll them around. They expand a lot so position them accordingly.
Place the sugar coated blobs onto a parchment paper covered baking sheet.
Bake for 10-12 minutes at 350 degrees.
It’s as easy as that!
Messiness– Moderately messy, but no more than any cookie that requires using your hands.
Simplicity – Come on, there’s only four ingredients!
Budget – Depends on what you already have in your kitchen and what’s on slae at your gorcery store. If you have to buy everything it should be around $10; probably less.
Delicious Factor – 5/5 The cookies come out soft, sweet, and very lemony. Again, if you don’t like lemon though, this is definitely not for you.
